Spiced Maple Granola

1/3 cup maple syrup

3 Tbs coconut oil

2 cups old fashioned oats

1/2 cup coconut flakes

1/2 cup raw sliced almonds or walnuts

1/2 cup raw pecans

1/3 cup raw pepitas

1/3 cup raw cashews

2 Tbs millet

1/2 tsp cinnamon

1/4 tsp cardamom

pinch of salt

Preheat oven to 325. Line a baking sheet with parchment paper.

In a small saucepan over low heat, melt coconut oil with maple syrup. Mix together remainder of ingredients in a medium sized bowl, then pour maple coconut mixture over and incorporate. spread evenly onto lined baking sheet and bake for 20-25 minutes. Watch carefully as baking temps and times can vary. Once you smell it and it’s golden brown remove from oven and let cool completely before breaking up and storing in a glass container.

This granola is sweet enough to enjoy with a good quality plain yogurt. Top with your favorite seasonal fruit. You can even try as a cereal with milk. I make a double recipe now because it goes so fast!
